Cold Cherry Mousse With Vanilla Sauce |

Dee-yummy is the best description for this. I got this from a friend whose mother-in-law gave to her at her bridal shower. Ingredients:
vanilla sauce |
4-1/2 teaspoons cherry brandy |
3/4 cup low fat vanilla ice cream |
mousse |
1 envelop whipped topping mix |
1/2 cup low fat milk |
1/2 teaspoon vanilla |
2 envelopes unflavored gelatin |
1/2 cup sugar |
1/2 cup cold water |
16 ounces frozen unsweetened cherries, thawed, undrained and divided |
1 tablespoon fresh lemon juice |
3/4 cup vanilla sauce |
Directions:
1. Prepare whipped topping mix according to package directions using milk and vanilla. 2. Set aside. 3. Combine gelatin and sugar in a small saucepan, stir in water. 4. Let stand 5 minutes to soften. 5. Heat over low heat until gelatin is completely dissolved. 6. Cool to room temperature. 7. Set aside 1 cup of cherries without juice, for garnish. 8. Place remaining cherries and juice into a blender. 9. Add lemon juice and gelatin mixture. 10. Process until blended. 11. Fold cherry purée into whipped topping until no streaks of white show. 12. Pour mixture into Bundt pan or ring mold. 13. Refrigerate 4 hours or overnight until jelled. 14. To serve, unmold mousse onto a large serving plate. 15. Spoon remaining 1 cup of cherries into the center of mousse. 16. Serve with vanilla sauce. 17. Vanilla sauce: 18. Stir brandy into low fat vanilla ice cream and blend well. 19. Try adding some Grand Marnier into the sauce for a different flavor. |
