2 ripe avocados, peeled and cubed |
1 cucumber, peeled, seeded and cubed |
3/4 cup low-fat soy milk |
2 tablespoons cilantro |
2 green onions, chopped |
2 cups vegetable broth |
1 salt and pepper to taste |
1 tablespoon lemon juice |
Directions:
1. In a blender or food processor blend the first 5 ingredients, until smooth. Add the lemon juice, salt and pepper and as much vegetable broth as you want to make the desired consistency. Chill. |
