Cold Asparagus With Walnuts |

This is so easy and elegant. A friend that does not cook served it at a luncheon! I believe the recipe is from the Houston Chronicle food section. I have used crushed pecans instead of walnuts with good results. Ingredients:
1 lb fresh asparagus |
2 tablespoons honey |
3 tablespoons soy sauce |
3 tablespoons rice vinegar |
1/4 cup crushed walnuts |
black pepper |
Directions:
1. Cook the tender tips of the asparagus in salt water until just tender. 2. Drain. 3. In a medium bowl, combine honey, soy sauce, and rice vinegar; whisk until blended and stir in walnuts. 4. Combine asparagus and dressing and toss gently. 5. Refrigerate until ready to serve. 6. Arrange on a platter and sprinkle with black pepper. 7. Serve. |
