Cold Asparagus with Curry Dip |

A delicious creamy dip for cold or hot asparagus or even artichokes. It is also excellent on potatoes and other veggies. Ingredients:
1 bunch fresh asparagus spears, trimmed |
3/4 cup mayonnaise |
1/4 cup sour cream |
2 tablespoons curry powder |
Directions:
1. Bring a pot of lightly salted water to a boil. Add asparagus, and cook for about 7 minutes, until bright green. Remove to a bowl of ice water to cool. Drain and set aside. 2. In a medium bowl, stir together the mayonnaise, sour cream and curry powder. Transfer to a nice serving dish, and serve with chilled asparagus. |
