COLCANNON MASHED POTATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Benson Estate in Canton, Texas in 1987. Ingredients:
2 cups mashed potatoes |
2 cups green cabbage shredded |
1/4 cup green onions sliced |
1/2 teaspoon freshly ground black pepper |
butter and parsley for topping |
Directions:
1. Steam or boil shredded cabbage until tender. 2. Drain cabbage and fold into prepared mashed potatoes. 3. Add onions and season with pepper. 4. Dot with butter and sprinkle with parsley and serve while warm. |
