This is such a traditional Irish dish that is seasonal. Every Halloween when the Kale is in season my Mum would cook this family favorite. I make it every year now and always remember my Mum as I sit down to enjoy it. Read more . I hope you enjoy it too. Paul :0) Ingredients:
2lbs potatoes |
1 medium parsnip |
large head of curly kaie |
1 large spanish onion |
half glass of milk |
stick of butter |
salt & pepper |
Directions:
1. Wash and Peel the Potatoes and Parsnip then chop into large chunks and place into a pot of cold water and bring to the boil 2. Rip the Kale in to pieces and steam over the potatoes in a colander 3. When the Potatoes and Parsnip are soft to the tip of a sharp knife, drain and mash together adding the butter and milk and bring to a fluffy consistency 4. Drain the Wilted Kale and place on a chopping block 5. Chop in to small pieces 6. Dice the Onion finely 7. add the Chopped Kale and Diced oinon to the mash and mix together 8. Season with Salt and Pepper 9. Serve Hot with a knob of butter 10. Yum! |
