A yummy, easy breakfast treat. Coconut is what makes it colada , by adding pineapple and banana you get a fun combo of flavors that might remind you of sipping umbrella drinks on the beach! :) Ingredients:
1 cup steel cut oats |
1 can coconut milk |
1 cup pineapple juice |
1 cup water |
1 ripe banana, mashed |
1/4 cup crushed pineapple, very well drained |
dash of salt |
honey to sweeten, if desired(i didn't think it needed it) |
shredded or flaked coconut to garnish, if desired |
Directions:
1. Combine coconut milk, pineapple juice and water in medium sauce pan and bring to a boil. 2. Add oats and reduce temperature to simmer and cook about 20-25 minutes, without stirring. 3. Stir well and add salt, banana and crushed pineapple(and honey, if using) 4. Cook until desired consistency and heated through. 5.
