This is one of those recipes tha doesn't seem like it would be much of anything, but guess What?? It is delicious, and just a little different!! Ingredients:
1 cup onion, chopped |
1 1/2 tablespoons canola oil |
12 boneless skinless chicken thighs or 12 boneless skinless chicken breasts |
2 (12 ounce) cans cola |
2 cups ketchup |
1/4 teaspoon garlic powder |
salt and pepper |
3 tablespoons cornstarch |
6 tablespoons cold water |
Directions:
1. In a large skillet or Dutch oven, sauté onion in canola oil until limp, but not browned. Add chicken and brown on both sides. Stir in cola, kethup, garlic powder, salt and pepper. Cover and simmer for 25-30 minutes, or until chicken is cooked through. Remove chicken and keep warm. 2. Make a smooth paste of cornstarch and water; stir into sauce in pan and cook for 2-3 minutes, until thickened. Return chicken to pan and heat through. |
