Cola is the secret ingredient in this easy black bean soup recipe. The black beans are further flavoured with onion, garlic, cumin, chili powder, and lime. Ingredients:
3 cups dried black beans, soaked overnight and drained |
1 onion, coarsely chopped |
1 jalapeno chile, chopped |
3 cloves garlic, pressed |
1/2 cup caffeine-free cola soda |
3 cups vegetable broth |
juice of 1 lime |
1 teaspoon ground cumin |
1 teaspoon ground coriander |
1/2 teaspoon chili powder, or more to taste |
1 teaspoon kosher salt, or more to taste |
Directions:
1. Place black beans, chopped onion, chile pepper and garlic in a large heavy pot. 2. Add cola and broth. 3. Bring to a boil, then reduce heat to low and simmer until black beans are tender, about 1 1/2 hours. 4. Remove 2 cups of the black beans and place in a blender with lime juice, cumin, chili powder, and salt. 5. Puree the mixture and return to the pot of black beans. 6. Stir to combine and cook 20 minutes longer. |
