A little different combination of tastes Ingredients:
1 3/4 cups all-purpose flour |
1/3 cup brown sugar |
1 tablespoon baking powder |
1/4 teaspoon salt |
1/2 cup chopped pecans |
1/2 cup butter, melted |
3/4 cup milk |
2 tablespoons instant coffee powder |
1 teaspoon vanilla extract |
1 egg |
1/8 cup brown sugar |
2 tablespoons chopped pecans |
Directions:
1. Preheat oven to 375 degrees F (190 degrees C). 2. Lightly grease 10 muffin cups. 3. In a large mixing bowl, combine flour, 1/3 cup brown sugar, baking powder, salt and 1/2 cup chopped pecans. 4. Add melted butter, milk, instant coffee, vanilla and egg. 5. Mix until all of the dry ingredients are absorbed. 6. FIll the prepared muffin cups 2/3 full. 7. Combine the remaining brown sugar and pecans, sprinkle over the tops of the muffins. 8. Bake at 375 degrees F (190 degrees C) for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. |
