Coffee Nut Macaroons Disappearing Cookies |

This is an interesting spin off on the meringue cookie. Mom didn't know that, she just kept them coming. We loved these when we were little and were fascinated that they disappear in your mouth. Ingredients:
2 egg whites |
1 1/3 cup sugar |
2 tbsp instant coffee |
2/3 cup cashews, chopped |
1 tsp vanilla |
Directions:
1. Beat egg whites until stiff, but not dry. 2. Mix sugar and coffee; gradually add to egg whites, beating constantly until blended. 3. Fold in nuts and vanilla. 4. Drop by tsp. onto greased sheets at 325 degrees for 15 minutes. 5. Makes 48 cookies. |
