Another one mom used to make, the frosting puts this one over the top. Eat with friends or prepare to loosen your belt. Ingredients:
4 eggs |
3 cups sugar |
1 cup vegetable oil |
2/3 cup water |
15 ounces pumpkin |
3 1/2 cups flour |
1 1/3 teaspoons salt |
1/2 teaspoon baking powder |
2 teaspoons baking soda |
1/2 teaspoon cinnamon |
1/2 teaspoon nutmeg |
3 tablespoons butter |
1 cup powdered sugar |
1 teaspoon hot coffee |
1 teaspoon vanilla |
Directions:
1. Beat eggs & regular sugar. 2. Add oil. 3. Combine dry ingredients (up to nutmeg) and add alternately with pumpkin and water. 4. Bake 1 hour at 325 deg F. 5. Topping: melt butter and combine with powdered sugar, coffee and vanilla, then spread over warm bread. |
