these cookies look awesome.. I haven't tried them.. but I thought some of the coffee people out there would like to try making them.. the recipe is from the Gifts from the Kitchen cookbook.. I use this cookbook alot. Read more . the description they give is: they are studded with chocolate-covered coffee beans, chunks of toffee candy bars and almonds !!!!
Ingredients:
1/2 cup butter, softened
1/2 cup shortening
3/4 cup sugar
3/4 cup packed light brown sugar
2 eggs
1 teasp. vanilla
2 1/4 cups flour
1 teasp. baking soda
1 teasp, salt
1/2 teasp. cinnamon
1 cup chopped toasted almonds
3 ( 2 oz. ) packages of chocolate-covered coffee beans
4 ( 1.4 oz. ) bars english toffee-flavored candy, chopped
Directions:
1. beat butter and shortening at medium speed of and electric mixer until creamy
2. gradually add sugars, beating well
3. add eggs and vanilla. beat well
4. combine the flour, baking soda, salt, and the cinnamon.
5. add to butter mixture. beating well
6. stir in the almonds, coffee beans and the candy
7. cover and chill dough if desired
8. drop dough by heaping teaspoonfuls onto an ungreased baking sheet
9. bake at 350' F for 10 to 11 minutes or until golden
10. cool on baking sheet for 1 minute
11. remove to a wire rack and cool completely
12. makes approx. 4 dozen
