Coeur D'alene Pumpkin Pie |

This is the pumpkin pie my mom has always made. I think she got the recipe out of the newspaper or something many years ago. The filling is closer to a pumpkin custard than a traditional pumpkin pie filling. Coeur d'Alene is a city in Northern Idaho, by the way ;) Ingredients:
3 eggs |
1/2 cup brown sugar |
1/2 cup sugar |
1 tablespoon flour |
1/2 teaspoon salt |
1/2 teaspoon nutmeg |
1/2 teaspoon allspice |
1 teaspoon cinnamon |
1 1/2 cups pumpkin |
1 1/2 cups milk, heated |
1 tablespoon brown sugar |
2 tablespoons butter |
Directions:
1. Beat eggs and sugar. 2. Add remaining ingredients (pumpkin and milk last) and blend. 3. Pour into 9 pastry-lined pan and bake at 450* for 10 minutes. 4. Meanwhile, melt 2 T butter and mix with 1 T brown sugar. After first 10 minutes of baking, pour mixture over pie, and continue baking at 350* for another 40 minutes. |
