Codfish Cakes With Green Onions & Dill |

Codfish cakes are fried until crispy and golden brown to provide a taste of the New England coast. I love love these fishcakes, I serve them as a complete meal with some fries and coleslaw. Simple and quick meal :) Land-O-Lakes Cookbook. Ingredients:
1 lb fresh cod fish fillets or 1 lb frozen cod fish fillet, thawed and drained |
2 cups fresh breadcrumbs, course |
1/4 cup green onion, chopped |
2 eggs, slightly beaten |
1/2 teaspoon salt |
1/4 teaspoon dill weed |
1/4 teaspoon black pepper |
1 tablespoon lemon juice |
1/4 cup butter or 1/4 cup margarine |
Directions:
1. flake cod fillets apart with fork or mallet. 2. in medium bowl stir together flaked cod and remaining ingredients except butter. form into 6 patties. 3. melt butter in skillet until sizzling, place 3 patties in skillet, cook over med-high heat until golden brown, turn and continue cooking until browned and fish flakes with fork. 4. repeat with remaining patties. |
