American home cooking Ingredients:
1 1/2 cups shredded salt cod fish |
1 1/2 cups hot water |
2 cups hot mashed potatoes |
2 tablespoons butter |
2 tablespoons minced onions |
1/2 teaspoon allspice |
1/2 cup flour |
oil or shortening (for frying) |
tomato sauce |
coleslaw |
Directions:
1. Soak the codfish in hot water for 3 mins. 2. drain and with hands squeeze as dry as possible. 3. (codfish will expand when wet, but after squeezing it packs back into about 1 1/2 cups. 4. In a bowl mix together the codfish and potatoes, butter, onion, and spice. 5. Blend well. 6. with hands shape into 1 and 1/2 inch bowls. 7. roll balls in flour . 8. heat oil or shortening to temp of 375 degrees . Fry for 1-2 mins or until balls are golden brown all over. 9. drain on paper towels and serve with tomato sauce and coleslaw. |
