This is a low fat meal the whole family can enjoy. Cod is a mild-tasting fish that lends itself to a variety of flavors. Feel free to use another white fish if you prefer. Serves this cod and leeks meal with a side dish of whole grain rice or couscous. Ingredients:
2 tsp olive oil |
1 pound leeks, white and light green parts only, cleaned and sliced |
2 garlic cloves, finely chopped |
8 ounces mushrooms, sliced |
14 1/2 ounce diced tomatoes |
1 pound cod |
1/2 cup fresh chopped parsley |
Directions:
1. Preheat oven to 450 degrees. In a large oven-proof skillet sauté leeks, garlic and mushrooms in olive oil until softened. Add tomatoes and simmer for 5 minutes. Place cod fillets in skillet on top of vegetables. 2. Cover and place in oven for 15 minutes. 3. Uncover and sprinkle with fresh parsley. 4. Serves 4 |
