cod steamed over fennel, potatoes, onion, garlic Ingredients:
24 oz cod |
1 fennel bulb (sliced into strips) |
2 russet potatoes (cut lengthwise, then into slices) |
2 tbsp tomato paste |
1 tbsp olive oil |
3 clove garlic (minced) |
1 small onion (chopped) |
14 oz chicken broth |
1/2 tsp salt |
1/4 tsp pepper |
Directions:
1. season cod with salt & pepper 2. sate garlic & onion, about 5-7 minutes 3. add tomato paste and stir 4. add chicken broth, sliced fennel, sliced potato, salt & pepper, cover, simmer until vegetables are tender (about 10 minutes). Set cod filets on top of vegetables, cover, simmer for 8 minutes. |
