Sounds scary, but it's not. Cod liver is one of the best sources of Omega-3 fatty acids, and cod liver oil is one of the most valuable supplements you can take. So why take a supplement, when you can have a real deal for lunch? Read more ? Ingredients:
1 can of cod liver in oil |
4 hard boiled eggs |
1 english cucumber |
1 small bunch of thin scallions |
fresh dill and parsley |
kosher or sea salt |
ground black pepper |
lemon juice |
optionally, 4 large tomatoes |
Directions:
1. Boil eggs, let cool 2. peel and dice eggs and cucumber 3. chop scallions 4. drain the cod liver, reserving about 2 tbs of oil 5. chop the liver and toss in with the remaining ingredients 6. chop herbs and toss in 7. season with salt and ground black pepper to taste 8. add 1-2 tbsp of lemon juice 9. don't mash it, just toss lightly 10. chill salad for an hour or so 11. serve on a leaf of crisp lettuce with toasted bread 12. optionally, cut the top off the tomatoes and scoop them out 13. sprinkle some salt inside the tomatoes and let them sit for a few minutes 14. spoon salad into cored tomatoes, using them as cups |
