Yes, there are fancier chowders but this one cooks up in 20-30 minutes depending on how fast a chopper you are, and is cheap to make as well. I get the bags of frozen cod fillets at the warehouse stores to keep on hand. My kids gobble this down. Ingredients:
3 cups milk |
3 cups water |
1 onion, chopped |
1 lb new potato, cubed |
1 tablespoon fish bouillon cube |
10 ounces frozen corn |
1 lb cod fish fillet, boned and cut in 1 inch chunks |
Directions:
1. Bring milk and water to simmer in a large pot. Add onion, potatoes, and bouillon. Simmer 12 minutes or until potatoes are tender. If you like a thicker chowder, remove a cup of the potatoes and puree in a blender or vegetable mill, then stir back into chowder. 2. Add corn. Return to simmer. Add cod; simmer 3 minutes or until fish is opaque. Taste and season with fresh ground pepper as desired. |
