Cod Fillet with Pine Nuts and Basil |

Ingredients:
4 6 to 8 ounce fresh cod fillets |
4 tablespoon(s) olive oil |
1/2 lemon, juiced |
2 tablespoon(s) basil, chopped |
3 tablespoon(s) pine nuts |
salt and pepper to taste |
Directions:
1. Mix oil, lemon juice and basil. 2. Marinate the cod for 20 minutes in the above mixture. Remove the fillets and reserve the marinade. 3. Place fish on a baking sheet and bake 8-10 minutes, depending on thickness of the fillet, at 450 degrees. 4. Heat remaining marinade to a simmer. 5. Drizzle sauce over finished cod fillets. |
