Ingredients:
3 cups all purpose flour
4 teaspoons baking powder
1 cup shredded coconut
2 teaspoons sugar
2 eggs beaten
2 cups milk
4 teaspoons margarine or butter melted
1/2 teaspoon salt
Directions:
1. Mix together flour, shredded coconut, salt, sugar and baking powder.
2. Add milk, beaten eggs and melted shortening.
3. Beat well.
4. Cook in hot well-greased waffle iron until golden brown.
5. Serve with a Peach-Blueberry Sauce or any fruit sauce
