This is a nice change from the regular appetizer and healthy. You can enjoy guilt free. Ingredients:
1 can of tuna ( i like to use the one in oil ) |
1 cup coconut |
1/2 cup sour cream lite |
4 green onions chopped |
1 tsp. salt |
1 tsp. curry |
dash of pepper |
one english cucumber cut in rounds |
a few ripe olives sliced for garnish on the top of the tuna rounds |
Directions:
1. Drain the tuna and put in a bowl 2. Mix the coconut, sour cream, onions, salt, curry, and pepper. 3. Put the cream mixture into the tuna and stir. 4. Cut up the cucumber in rounds. They look very pretty if you cut them on an angle. Place these on a serving tray. 5. Put the tuna on the cucumber by spoonfuls and garnish each one with a slice of ripe olive. |
