These are really good and look pretty also. Hope you enjoy these, you can change out the flavor with different kinds of Jam's - Enjoy! Ingredients:
1/2 cup crisco |
1/2 cup sugar |
1 egg, separated |
3/4 cup flour |
1 teaspoon vanilla |
1/4 teaspoon baking powder |
1/4 teaspoon salt |
2/3 cup flaked coconut |
1/4 cup preserves or jam |
Directions:
1. Preheat oven to 375 - grease cookie sheets. 2. Cream Crisco with sugar, egg yolk and vanilla. Combine flour with salt and baking powder. Add to creamed mixture. Blend well. 3. Form into balls about 1 inch in diameter. 4. Beat egg white until slightly frothy. Dip dough balls into egg white then roll in coconut. Place on greased baking sheet. Make shallow depression in center of each cookie. 5. Spoon 1/2 teaspoon of preserves into depression. 6. Bake at 375 for 8-9 minutes. Makes 2 dozen. |
