Ingredients:
1 (13 1/2-ounce) can coconut milk |
4 cups water |
1/4 teaspoon salt |
3/4 cup sugar |
7 ounces small tapioca pearls |
1/4 cup lemon juice |
green food coloring, as needed |
Directions:
1. Bring the coconut milk, water, salt, and sugar to a boil in a heavy saucepan. While boiling, whisk in the tapioca and continue to simmer until tender, 12 to 14 minutes, stirring occasionally. Cool immediately by placing in a flat bowl and covering the surface with plastic. Let rest about 2 hours. When cool, add the lemon juice. Stir to incorporate. To make green, add drops of food coloring to desired color. 2. To serve, scoop into individual bowls. 3.
