My Aunt Ruth made these cookies for Christmas thirty-five years ago. I was a new bride and I asked for the recipe. I made a double recipe for Christmas and froze them. My husband found them and by Christmas only a few remained. He loves them frozen. I do not know where she got the recipe. Ingredients:
2 tablespoons butter |
3 tablespoons water |
1 teaspoon vanilla extract |
2 cups icing sugar |
1/2 cup instant dry milk powder |
3 cups shredded coconut |
Directions:
1. melt butter in a pot. 2. add water and vanilla. 3. mix icing sugar and instant milk. 4. add to butter mixture 1/2 cup at a time, mixing well. 5. stir in coconut. 6. drop by teaspoon onto wax paper. 7. let stand for ten minutes. 8. melt chocolate chips. 9. swirl 1 teaspoon on top of each one. 10. let harden. |
