Coconut Stuffed Sweet Potatoes |

This is an incredible sweet potato. Very impressive, very tasty and the addition of coconut is phenominal. Enjoy Ingredients:
4 medium sized sweet potatoes |
vegetable oil |
1/2 cup granulated sugar |
1/2 cup evaporated milk |
1/3 cup orange juice |
1/8 teaspoon salt |
1 tablespoon grated orange rind |
1 cup flaked coconut divided |
Directions:
1. Scrub potatoes thoroughly and rub skins with oil then bake at 375 for 1 hour. 2. Let cool to touch then slice skin away from top of each potato. 3. Carefully scoop out pulp leaving shells intact. 4. Combine pulp, sugar, milk, orange juice and salt then beat with electric mixer until smooth. 5. Stir in rind and 1/2 cup coconut then spoon into shells and sprinkle with remaining coconut. 6. Bake at 350 for 20 minutes. |
