4 ounces bacon, diced |
3 teaspoons garlic, diced |
1 small red onion, thinly sliced |
2 lbs fresh baby spinach |
1/2 cup coconut milk, unsweetened |
2 teaspoons cayenne pepper, ground |
1/2 teaspoon sea salt |
1/8 teaspoon black pepper, cracked |
Directions:
1. Brown bacon in a saute pan until just crisp. 2. Add onion and saute until translucent. 3. Add garlic and saute, just until lightly golden. 4. Add spinach, tossing until just wilted. 5. Add milk, cayenne pepper, salt and pepper. 6. Stir until incorporated. Plate. |
