2/3 cup shortening |
1 cup firmly packed brown sugar |
2 eggs |
1 teaspoon vanilla extract |
2 cups all-purpose flour |
1 teaspoon soda |
2 teaspoons ground cinnamon, divided |
1/2 teaspoon salt |
1 cup buttermilk |
1 cup flaked coconut |
1 cup sugar |
1/2 teaspoon ground nutmeg |
1/4 cup half-and-half |
Directions:
1. Cream shortening and brown sugar until light and fluffy. 2. Add eggs and vanilla; blend thoroughly. 3. Comine flour, soda, 1 teaspoon cinnamon, and salt. 4. Add to creamed mixture alternately with buttermilk, beginning and ending with dry ingredients; beat well after each addition. 5. Spoon batter into a greased and floured 13- x 9- x 2-inch pan. 6. Combine coconut, 1 cup sugar, 1 teaspoon cinnamon, nutmeg, and half-and-half; spoon over batter. 7. Bake at 350 degrees for 35 minutes or until cake tests done. 8. Yield: one cake. |
