The long prep time is to freeze the coconut water ice cubes. Ingredients:
1 (11 7/8 ounce) can coconut water |
3/4 cup coconut water |
2 cups chopped fresh pineapple |
2 cups 2% greek yogurt |
1 cup coconut sorbet |
1/2 cup unsweetened coconut milk |
1/4 cup shaved fresh coconut |
Directions:
1. The night before, pour coconut water into an ice cube tray and freeze until solid. 2. In a blender put: pineapple, yogurt, coconut sorbet, coconut milk, coconut water, fresh shaved coconut and 6 coconut ice cubes. Blend until smooth. Thin with more coconut water or milk, if desired. |
