A sweet & spicy shrimp dish with coconut milk. Ingredients:
1 cup chicken broth |
2 teaspoons sugar |
1 teaspoon chili powder |
1 teaspoon ground cumin |
3/4 teaspoon salt |
1/2 teaspoon cinnamon |
1/2 teaspoon garlic powder |
1/2 teaspoon thyme leaves |
1/4 teaspoon cayenne pepper |
1/2 lb yam, peeled and cut into thin 1/2 inch slices |
1 (14 ounce) can unsweetened coconut milk |
1 lb large shrimp, peeled and deveined |
1 1/2 cups ripe plantains, peeled and sliced |
Directions:
1. In a medium saucepan, combine chicken broth and seasonings. Bring to a boil. 2. Add yams; cover and boil 5 minutes or until yams are slightly tender. 3. Add coconut milk, shrimp and plantain. Reduce heat to medium-low. 4. Simmer, uncovered, 5 minutes or until shrimp turn pink, stirring occasionally. 5. Serve over rice, if desired. |
