A great nibbly appetizer or as a main dish with vegetables & potatoes.
Ingredients:
2 tbsp brown sugar
1/4 cup flour
1 dash cayenne
1/4 tsp salt
1 large egg
1 tbsp lime juice
1 cup shredded coconut
30 large shrimp
2 tbsp butter
Directions:
1. Combine first 4 ingredients in bowl.
2. Whisk lime juice & egg in another bowl.
3. Put coconut in yet another bowl.
4. Coat shrimp with flour mixture, then egg, and then cocnut.
5. Place on rack of a broiler pan & drizzle with butter.
6. Bake 7 to 8 minutes at 425 degrees.
