A great nibbly appetizer or as a main dish with vegetables & potatoes. Ingredients:
2 tbsp brown sugar |
1/4 cup flour |
1 dash cayenne |
1/4 tsp salt |
1 large egg |
1 tbsp lime juice |
1 cup shredded coconut |
30 large shrimp |
2 tbsp butter |
Directions:
1. Combine first 4 ingredients in bowl. 2. Whisk lime juice & egg in another bowl. 3. Put coconut in yet another bowl. 4. Coat shrimp with flour mixture, then egg, and then cocnut. 5. Place on rack of a broiler pan & drizzle with butter. 6. Bake 7 to 8 minutes at 425 degrees. |
