Coconut Rice from Zanzibar |

I guessed on the yield and the time. Ingredients:
2 cups basmati rice |
2 cups unsweetened coconut milk |
2 cups water |
1 teaspoon salt |
Directions:
1. Soak rice for twenty minutes, then drain. 2. Bring the coconut milk, water, rice and salt to a near boil. Cook for about ten minutes, stirring constantly. 3. Reduce heat to simmer and cover tightly. Let steam for 20-25 minutes. |
