A different and tasty sidedish Ingredients:
1 15-oz can unsweetened coconut milk |
1 1/4 cup water |
1 cup rice |
1 15-oz can black beans, drained and rinsed |
salt and pepper to taste |
Directions:
1. Place water and coconut milk in a med saucepan. 2. Put over med-high heat and bring to a boil. 3. Add rice and beans. 4. Cover and turn stove off , but leave pot on the burner for 20-25 minutes, until the rice is done. 5. Fluff & serve. |
