Ingredients:
1 15-oz can unsweetened coconut milk
1 1/4 cup water
1 cup rice
1 15-oz can black beans, drained and rinsed
salt and pepper to taste
Directions:
1. Place water and coconut milk in a med saucepan.
2. Put over med-high heat and bring to a boil.
3. Add rice and beans.
4. Cover and turn stove off , but leave pot on the burner for 20-25 minutes, until the rice is done.
5. Fluff & serve.
