I Love coconut milk and am always looking for new ways to use it. This is one of my favorites Goes great with spicy curry and kids LOVE it. Ingredients:
1 cup of jasmine rice |
1 cup of coconut milk |
1/2 cup of water |
1 t butter or oil |
pinch of salt |
Directions:
1. Rinse rice one or two times to remove excess starch. Drain. 2. Place drained rice in saucepan and add water, butter, coconut milk and salt. 3. Place uncovered saucepan on med heat and bring to a boil - stir often. 4. Let water boil down a little and then reduce heat, cover tightly with a lid and simmer for 20 min. 5. Fluff and serve. = ) |
