Ingredients:
2 tablespoons vegetable oil |
1 cup long grain white rice |
1 cup coconut milk |
1 cup chicken stock |
salt and pepper |
Directions:
1. In a saucepan, heat oil over medium high heat. Stir in rice and cook for 1 minute. Pour in coconut milk and chicken stock and bring to a boil. Cover and reduce heat to low and simmer for 15 minutes. Remove pan from heat and allow to rest for 5 minutes. Serve hot |
