1 cup jasmine rice |
1 1/2 cups water |
1 cup unsweetened coconut milk, well shaken |
2 teaspoons grated lime zest |
1 tablespoon lime juice |
1 teaspoon kosher salt |
1/4 teaspoon fresh ground black pepper |
Directions:
1. Combine all of the ingredients in a medium saucepan over high heat. Cover and bring to a boil. Reduce heat to low and simmer for 20 minutes, or until all of the liquid is absorbed. |
