Ingredients:
1 cup jasmine rice
1 1/2 cups water
1 cup unsweetened coconut milk, well shaken
2 teaspoons grated lime zest
1 tablespoon lime juice
1 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
Directions:
1. Combine all of the ingredients in a medium saucepan over high heat. Cover and bring to a boil. Reduce heat to low and simmer for 20 minutes, or until all of the liquid is absorbed.
