My mom gave me this easy recipe. We just had it the other night with a pineapple & tempeh stir fry recipe from Vegetarian Times - it was delicious!! We used jasmine rice in this recipe. Ingredients:
1 (14 ounce) can light coconut milk (not sweetened) |
1 cup long grain rice |
Directions:
1. Rinse rice. 2. Bring rice and milk to a low boil. Put lid on and simmer for 20 minutes or until done. Check to make sure it doesn't burn - we had to add a little extra water to ours. |
