This is a simple and delicious way to jazz up your white rice. Serve it with any tropical dish for a great twist! Ingredients:
1 cup jasmine rice |
1 (13 1/2 ounce) can coconut milk (about 1 1/2 cups) |
1/8 cup water |
3/4 teaspoon kosher salt |
Directions:
1. In a medium saucepan, bring coconut milk and water to a boil. Stir in the rice and the salt, cover and reduce the heat to low. Simmer (never removing the lid) for 15 minutes, or until all of the liquid is absorbed. |
