Ingredients:
2 cups sugar |
1 dash salt |
1/2 cup fresh coconut milk |
2 cups shredded fresh coconut |
1/2 teaspoon vanilla |
Directions:
1. Combine sugar,salt and coconut milk in a 2 quart saucepan. 2. Cook over medium heat,stirring constantly until sugar dissolves. 3. Cover and continue to cook 2-3 minutes to wash down sugar crystals from sides of pan. 4. Uncover and cook without stirring until mixture reaches soft ball stage (234). 5. Stir in coconut,return mixture to soft ball stage. 6. Remove from heat. 7. Let cool 10 minutes. 8. Stir in vanilla. 9. Beat with a wooden spoon until mixture is creamy and begins to thicken. 10. Working quickly,drop by rounded tablespoonfuls onto wax paper,let cool. |
