From the Weekend magazine dated Dec 20-26'2002. Ingredients:
225 g unsalted butter |
2 cups sugar |
1 teaspoon vanilla essence |
6 eggs |
2 cups all-purpose flour |
1 teaspoon salt |
8 ounces flaked coconut |
Directions:
1. Cream butter and sugar together in a large bowl. 2. Add essence. 3. Mix well. 4. Add eggs, one at a time, beating well after each addition. 5. Add flour and salt. 6. Mix well. 7. Fold in the flaked coconut. 8. Mix well. 9. Bake in a greased tube pan at 170 for 1 hour 10 minutes. 10. If you dont have a tube pan, use a loaf pan, and reduce the cooking time by 15 minutes, checking for doneness. |
