Coconut-pecan Chicken

Chicken appetizer fried in peanut-coconut mixture and served with apricot flavored dipping sauce.
Ingredients:
3/4c cocktail peanuts
2c sweetened coconut
1/4c flour
2 eggs
1lb boneless,skinned chicken breast(cut in 1 pieces)
vegetable oil,for frying
dipping sauce
3tbs honey
3tbs orange marmelade
1tbs. soy sauce
1/2 tsp. jarred mustard
Directions:
1. Place peanuts in food processor,whirl until finely chopped. Combine peanuts and coconut in a medium bowl. Plave flour in second bowl. Lightly beat the eggs in a third bowl. Dip chicken in flour,then eggand then in peanut-coconut mixture.
2. Pour oil in skillet(1/2 deep). Heat over medium heat. Add chicken to hot oil and cook 4-6 mins,turning once. Drain chicken on paper towel.
3. Combine all dipping sauce ingredients in small bowl. Serve with chicken. Enjoy!
