A moist, delicious bundt cake. Ingredients:
4 eggs |
3 cups sugar, divided |
1 cup vegetable oil |
3 tea. coconut extract, divided |
3 cups flour |
1/2 tea.baking powder |
1/2 tea. salt |
1 cup buttermilk |
1 cup flaked coconut |
1 cup chopped pecans |
1/2 cup water |
2 table. butter |
powdered sugar, optional |
Directions:
1. In mixing bowl, combine eggs, 2 cups sugar, oil and 2 tea. extract: mix well 2. Combine flour, baking powder and salt 3. add to egg mixturealternately with buttermilk: 4. just until moistened 5. Stir in coconut and pecans 6. Spoon into a greased 10 fluted tube pan 7. Bake at 350 for 60- 70 minutes or until a toothpick inserted near the center comes out clean. 8. Meanwhile, in a saucepan, combine the water, butter, and remainingsugar. 9. Bring to a boil and cook 5 more minutes 10. Remove from heat and add remaining extract 11. Slowly pour hot syrup over hot cake 12. Cool in pan for 4 hours before putting it on a serving plate 13. Sprinkle with powdered sugar if desired!!! 14. ENJOY!!!! |
