Gotten out of Get Saucy cookbook. Ingredients:
2 tablespoons smooth peanut butter |
1/2 teaspoon thai red curry paste |
1 teaspoon fresh ginger, peeled and finely grated |
1/3 cup canned unsweetened coconut milk, well stirred |
1/3 cup low sodium chicken broth |
1 tablespoon fresh lime juice |
1 pinch sugar |
salt |
Directions:
1. In a sm. bowl, combine peanut butter, curry paste and ginger. Gradually whisk in coconut milk and broth until smooth. Stir in the lime juice and sugar and season with salt. |
