Delicious chicken appetizer that the daughter of a friend introduced me to a long time ago. My grandkids love it. Me too! Ingredients:
3/4 c cocktail peanuts |
2 c sweetened coconut |
1/4 c flour |
2 ggs |
1 lb boneless,skinless chicken breasts,in 1 pieces |
vegetable oil to fry |
dipping sauce |
3 tbs honey |
3 tbs orange marmelade |
1 tbs soy sauce |
1/2 tsp prepared mustard |
Directions:
1. Place peanuts in food processor. Whirl until finely chopped. Combine peanuts and coconut in medium bowl. Place flour in second bowl. Lightly beat the eggs in a third bowl. 2. Dip chicken in flour,then egg,thenpeanut-coconut mixture. 3. Pour oil in skillet (1/2 deep). Heat oil over med. heat. Add chicken to hot oil. Cook 4 to 6 mins,turning once;drain chicken on paper towel. 4. Combine all dipping sauce ingredients in small bowl;serve with chicken Enjoy! |
