Ingredients:
1/2 cup butter or 1/2 cup margarine |
1 1/2 cups sugar |
2 eggs |
2 teaspoons grated orange rind |
1/4 cup orange juice |
3 cups flaked coconut, divided |
1 1/2 cups all-purpose flour |
1 teaspoon baking powder |
1/4 teaspoon salt |
Directions:
1. Cream butter in a large mixing bowl,gradually add sugar,beating well. 2. Add eggs,orange rind,juice and 2 cups coconut,stir well. 3. Combine flour,baking powder and salt,stir into creamed mixture. 4. Spread batter evenly in a greased and floured 13x9x2 inch baking pan. 5. Sprinkle with remaning coconut. 6. Bake at 350 for 25-30 minutes. 7. Cool completely in pan. 8. Cut into 2 inch squares. |
