Coconut-Orange Fudge Truffles |

Smooth, chocolate fudge with a tropical flair, thanks to the orange and coconut. Try also with raspberry flavouring. Ingredients:
2 tablespoons butter |
2/3 cup evaporated milk |
1 2/3 cups sugar |
1/2 teaspoon salt |
2 cups marshmallows |
1 1/2 cups semi-sweet chocolate chips |
1 teaspoon vanilla |
1 -2 tablespoon orange extract or 1 -2 tablespoon orange flavoring |
1 cup shredded coconut |
Directions:
1. Put butter, milk, sugar, and salt in a saucepan over medium heat and bring to a boil. 2. Boil for 5 minutes, stirring continually; remove from heat. 3. Add remaining ingredients, reserving 1/3 cup coconunt, and stir to mix. 4. Beat with a spoon for one minute or until marshmallows and chocolate are melted. 5. Pour into a WELL greased 8 x8 pan. 6. Cool until no longer sticky, then form into 8 rolls. 7. When rolls harden slightly, cut each into 8 equal pieces, then roll each piece into a ball. 8. Roll each ball in the reserved coconut to coat. 9. Let stand to harden a bit more before serving. 10. Enjoy! |
