COCONUT OATMEAL COOKIES I obtained this recipe from an estate sale when I purchased the family collection from the Sullivan Estate in Dallas, Texas in 1988. Ingredients:
1 cup butter |
1 cup sugar |
1 cup brown sugar |
2 eggs |
2 teaspoons vanilla |
2 cups flour |
1 teaspoon baking powder |
1 teaspoon salt |
2 cups flaked coconut |
1 cup oatmeal |
Directions:
1. Preheat oven to 375 then cream butter, sugar and brown sugar until fluffy. 2. Add eggs and vanilla then beat in flour, baking powder and salt. 3. Fold in coconut and oatmeal then drop by spoonfuls onto greased cookie sheets. 4. Bake 10 minutes. |
