So much flavor in these delicious chewy cookies. These are a family favorite. Ingredients:
1 cup shredded coconut |
125 g (4 oz) butter |
1 cup brown sugar, lightly packed |
1 egg - beaten |
1 tsp vanilla |
1 cup rolled oats |
1/2 cup chopped, sliced almonds |
Directions:
1. Pre-heat oven to 350 degrees 2. Lightly grease & flour several cookie sheets 3. Put coconut in a shallow pan, stir constantly over medium/ low heat until golden brown 4. Remove from pan immediately to prevent burning - cool & set aside 5. With an electric mixer, cream butter & sugar until light & fluffy 6. Add beaten egg & vanilla & beat well 7. Stir in oats, nuts & toasted coconut 8. Drop teaspoons of mixture onto prepared cookie sheets, allowing room for spreading 9. Bake for 10 mins 10. Cool on trays |
