Our family's favorite cookies. They pack a LOT of flavor, but are not decorative cookies. They came from my MIL, who is now afflicted with Parkinson's and cannot recall the many times we made them together over the years. We eat them and remember happier times. :-) Ingredients:
2 1/4 cups flour |
1 teaspoon salt |
1/2 teaspoon baking powder |
1/2 teaspoon baking soda |
2 cups uncooked oatmeal (the old fashioned variety, not instant) |
1/2 cup shortening |
1/2 cup butter |
1 cup white sugar |
1 cup brown sugar |
2 eggs |
2 teaspoons vanilla |
1 cup chopped nuts (i prefer pecans) |
3/4 cup coconut (3.5 oz can) |
Directions:
1. Preheat oven to 350. 2. Sift dry things, stir in oats. 3. Cream shortening and butter, beat in sugars. 4. Add eggs, vanilla and cream until fluffy. 5. Stir in dry stuff. 6. Add nuts and coconut. 7. Drop 1 1/2 diameter blobs onto a greased baking sheet. 8. Bake 350 10-15 minutes. |
